Foodie Friday- Gluten Free Oatmeal Cookies

I guess I would consider myself a foodie. I like food. I like to make food. And I generally like to make food that is healthful for you. For part health reasons and part vanity. I look at a REAL chocolate chip cookie and gain 3 pounds.

My kids are always wanting cookies and since I can’t bring myself to buy a package of a cookies at the grocery store, I usually make my own. Why buy premade when you can do it yourself?

Here’s a recipe that’s gluten free, if you choose to use oat flour. You can substitute that out with regular flour if you’d like. Works just as well!

Ingredients:

1/2 c coconut oil (or canola oil if you don’t have coconut oil)

1/3 c plu 2 tbsp sucanat (or brown sugar)

1 egg white

3/4 tsp vanilla extract

3 tbsp water

2 c rolled oats

2/3 c oat flour

1/4 tsp sea salt

1/2 tsp baking soda

2/3 c raisins (I did half raisins, half craisins b/c that’s what I had on hand!)

1 tsp cinnamon

Preheat oven to 350. Mix wet ingredients. Mix dry ingredients. Combine until just blended. Add in raisins. Bake for 10-15 minutes.

Use parchment paper, a silpat, or spray your cookie sheet with non stick spray. They will stick big time otherwise!

The Verdict: She loves them! So does my son. And I do too! My husband… mmmm not so much. He’ll eat them, but would much prefer “regular” cookies.
